Stephen's Favorite Granola

6 cups quick oats

2 cups slivered almonds

2 cups flaked coconut

1 1/3 cups oil

2 cups maple syrup*

Combine all ingredients.  Spread evenly on a greased cookie sheet.  Bake at 300 degrees for 20 minutes.  Stir.  Bake 10-15 minutes longer.  When finished baking, pour out on foil until it cools.  Break up chunks and put in airtight container.  If you want raisins in your granola, add about 2 cups AFTER baking.

*Homemade maple syrup

Boil 2 cups sugar and 1 cup water

After cooling slightly, add 1 tsp maple extract and 1/2 tsp vanilla extract

Barbequed Lentils

2 cups dry lentils

5 cups water

1/2 bottle BBQ sauce

Process lentils in water by soaking or pressure cooking.  After lentils are processed, pour 1/2 bottle of BBQ sauce.   Heat and mix well.  Serve on buns.  Add carrot sticks for a healthy and filling meal!

I buys lentils in bulk (25 lb bag.)  When BBQ sauce goes on sale, I stock up.  I buy large onion buns or sesame seed buns or just plain buns at a bread outlet for about $1.70 for a large tray of 40-50 buns.  Very inexpensive meal!
